How do avocados store their energy as fat?
Looking at almost every other vegetable, all energy storage is done in the form of carbohydrates. First, what makes an avocado, biologically, different in that it doesn't store it this way? Also, are any other types of vegetables/fruits that store energy in fats as well?
Avocados & olives are the main fat containing fruits. To a lesser extent soy beans & durian fruit.
Many nuts & seeds are very high in fats. (for example)
Brazil Nuts - 85% calories from fat
Almonds - 72% calories from fat
Pumpkin seeds - 71% calories from fat
Sunflower seeds - 74% calories from fat
Flax seed - 65% calories from fat (high in Omega3 fatty acids)
Chia seeds - half calories from fat (high in Omega3 fatty acids)
